- The development of Hawaiian regional cuisine changed the face of Hawaiian cuisine which had previously relied on imported goods by emphasizing local agriculture.
- He has several of restaurants in Hawaii one of which was ranked sixth in a listing of America's fifty best restaurants by Gourmet magazine.
- He was featured in the finale of hit TV show Top Chef (mentioned before in the beginning of the list) in which he introduced the contestants to the cuisine of Hawaii.
